Cookies with corn flakes? Yes, these are really good. Corn flakes are kept crunchy and it tastes almost like breakfast cereal with jam on top! I found the recipe here.
Corn Flakes kakor
1,8 dl corn flakes, krossade
1,2 dl havregryn
1,8 dl vetemjöl
3/4 dl ljust farinsocker
0,5 tsk bakpulver
6 msk osaltat smör, kylt
6 msk sylt
Värm ugnen till 175°C. Smörj 6 muffinsformar.
I en skål blanda ihop majsflingor, havregryn, mjöl, farinsocker och bakpulver. Tillsätt smör och gnid in med hjälp av fingrarna, tills degen har samma konsistens som våt sand.
Fyll muffinsformarna till hälften med blandningen, tryck en grop i blandningen och lägg en matsked av sylt i varje, toppa sedan med resterande cornflakeblandning. Grädda tills gyllenbruna, ca 20 minuter. Låt svalna helt.
Corn Flakes Crumbles
1,8 dl corn flakes, crushed
1,2 dl rolled oats
1,8 dl flour
3/4 dl light brown sugar
0,5 tsp baking powder
6 tbsp unsalted butter, chilled
6 tbps fruit preservative
Preheat oven to 175°C. Grease 6 muffin cups.
In a bowl mix together corn flakes, oats, flour, brown sugar and baking powder. Add butter and rub with your fingers, until the dough has the consistency of wet sand.
Fill muffin cups halfway with the mixture, pressing down with your fingers. Add a tablespoon of fruit preservativet to each cup, then top with remaining cornflake mixture. Bake until golden brown, about 20 minutes. Allow to cool completely.
