I'm very fond of different dips and eat them happily with various dishes, on crispbread or as dip for vegetables or tortilla chips. Baba ganoush is made of eggplants and in Singapore, you can get many different types and sizes of eggplant. You can use the eggplant you are able to get hold of.
Baba Ganoush
2 medium eggplants
0,5 dl tahini
0,5 dl emon juice
2 garlic cloves,
minced
1/4-0,5 tsp ground cumin
0,5 tsp salt
2 tbsp fresh parsley, chopped
Preheat the oven to 200 degrees C. Prick the eggplants all
over with a fork. Place on a baking sheet and roast for about 20 minutes.
Remove from the oven and allow to cool. Peel the skin off the eggplant. Discard
the skin. Put alll the ingredients in a food processor and mix until smooth.
Season to taste.
Baba Ganoush
2 auberginer
0,5 dl tahini
0,5 dl citronsaft
2 vitlöksklyftor, hackade
1/4-0,5 tsk malen spiskummin
0,5 tsk salt
2 msk färsk persilja, hackad
Sätt ugnen på 200 grader C. Gör hål i äggplantorna med en
gaffel. Lägg dem på en plåt och rosta dem i ugnen i ca 20 minuter. Ta ut ur
ugnen och låt svalna. Dra bort skinnet på auberginerna och lägg aubergineköttet
med resterande ingredienser i en matberedare och mixa tills slät. Smaka av.
