Today you get the recipe for the zucchini patties I served with the cabbage gratin. They are yummy together. But you can use the patties for burgers or eat them together with a fresh, summery salad.
Zucchinibiffar
6-8 st
400 g zucchini, riven
1 liten röd lök, riven
1 msk psylliumhusk
1-2 ägg
salt
peppar
vitlökspulver
Riv zucchinin grovt och lägg i ett durkslag. Salta. Efter 15 minuter krama ur vätskan. Blanda zucchinin med resterande ingredienser i en skål och låt vila i 5-10 minuter. Stek biffar i smör tills gyllenbruna på båda sidor.
Zucchini Patties
6-8 pcs
400 g zucchini, grated
1 small red onion, grated
1 tbsp psyllium
1-2 eggs
salt
pepper
garlic powder
Grate the zucchini coarsely and place in a colander. Add salt. After 15 minutes, squeeze out the liquid. Mix zucchini with the remaining ingredients in a bowl and let rest for 5-10 minutes. Fry the patties in butter until golden brown on both sides.

Åh så gott det låter! Nu ångrar jag nästan att jag inte sådde zucchini i år igen, men jag får köpa hem :)
