Today I'm giving you a recipe for muffins with the taste of chocolate and gingerbread. They are both gluten-free and sugar-free. But as usual, you can use white sugar and wheat flour if you like. I like to experiment and these muffins also got a little protein powder. Very good! And they get even yummier if you eat them cold from the fridge.

3/4 dl Sukrin gold
2 msk kokosolja, smält
2 msk mandelmjöl
1 msk vanilj proteinpulver (Muscletech phase 8)
2 msk kakaopulver
0,5 tsk vanilj
en nypa salt
pepparkaksdegsbitar
Blanda ihop ägg och socker i en skål. Tillsätt kokosolja och sedan resterande ingredienser. Blanda tills slät. Häll smeten i två (á 7cm i diameter) formar eller i fem små muffinsformar och tryck i bitar av pepparkaksdeg. Grädda dem i 175 C i ca 12-18 minuter. Låt svalna.
Chocolate Gingerbread Brownie Muffins, Sugar-free and Gluten-free

3/4 dl Sukrin gold
2 tbsp coconut oil, melted
2 tbsp almond flour
1 tbsp vanilla protein powder (Muscletech phase 8)
2 tbsp cocoa powder
0.5 tsp vanilla
a pinch of salt
gingerbread dough pieces
Mix together butter and sugar in a bowl. Add the egg and then remaining ingredients. Mix until smooth. Pour batter into two (á 7cm in diameter) molds or five small muffin cups and press into the batter pieces of gingerbread dough. Bake at 175 C for about 12-18 minutes. Let cool.
