I got to try Abbott & Kinney's coconut yogurt, which is made from coconut milk. It has a very good and gentle flavor of coconut. I chose to use one of the jars in this berry cake. Top the cakes with more yogurt and berries.
Berry Coconut Yogurt Cakes
2 egg whites
1 dl sukrin or other sweetener
10 drops Nustevia vanilla
2.5 tbsp coconut oil, melted and luke warm
125 ml coconut yogurt, Abbot & Kinney's
0.5 dl almond flour
2.5 tbsp coconut flour
1 tsp baking powder
1 dl mixed berries, I used frozen
Stir together egg whites, sugar and vanilla. Then add the coconut oil and yogurt and stir. Add the rest of the ingredients and mix well. Pour batter into 3 silicon molds, (7cm) and bake in 175 C degree oven for 30-35 minutes.

2 äggvitor
1 dl sukrin eller annat sötningsmedel
10 droppar Stevia vanilj
2,5 msk kokosolja, smält
125 ml kokosyoghurt, Abbot & Kinney’s
0,5 dl mandelmjöl
2,5 msk kokosmjöl
1 tsk bakpulver

Säkert gott. Här har vi inte färdig kokosyoghurt.
