During summer, I know there are many who avoid hot food and eat rather fresh cold dishes and salads. I am a person who never had trouble with hot food even if it is summer. In Singapore, it was always summer and hot and there I ate hot meals daily. So therefore you get today a recipe for soup made of vegetables and beans. You can choose to do it in the summer or you can save the recipe until the fall :)
Bean Vegetable Soup
1 tbsp coconut oil
1 small red onion, chopped
1 garlic clove, chopped
200 g vegetables, chopped (zucchini, bell pepper, carrots, leek)
1 can cannellini beans, drained and rinsed
400 g tomato sauce
1 tbsp pesto
salt
black pepper
Heat a pan with coconut oil. Add the onion and garlic and fry for a minute. Add the vegetables and stir-fry for two minutes, then add beans and tomato sauce. Let simmer for 15-20 minutes. Stir in pesto and season with salt and pepper. Add water for a thinner soup.
Bön-Grönsakssoppa
1 msk kokosolja
1 liten röd lök, hackad
1 vitlöksklyfta, hackad
200 g grönsaker, i små bitar (zucchini, paprika, morötter, purjolök)
1 burk cannellini bönor, avrunna och sköljda
400 g tomatsås
1 msk pesto
salt
svartpeppar
Hetta upp en kastrull med kokosolja. Tillsätt lök och vitlök och stek i en minut. Tillsätt grönsakerna och stek i två minuter, tillsätt sedan bönor och tomatsås. Låt sjuda i 15-20 minuter. Blanda i pesto och krydda med salt och peppar. Tillsätt vatten för en lösare soppa.
