Idag firas Finlands självständighetsdag, grattis Finland!
Much of what I am doing right now in the kitchen has the taste of gingerbread. But it's so good and it's December only once a year, so I take the opportunity to eat a lot of it. Of course you can eat gingerbread and baked goodies with flavors of gingerbread all year round, but usually you don't do it. Today's recipe is baked oatmeal with lingonberries and gingerbread.
Today Finland's independence day is celebrated!
Ugnsbakad Gröt men Pepparkaka och Lingon
2 portioner
2,5 dl havregryn
1 msk chiafrön
0.5 msk Love Arctic mald linfrö & havtorn
1 tsk Love Arctic lingonpulver
1 tsk pepparkakskrydda
0,5 tsk bakpulver
en nypa salt
2,5 dl mandelmjölk
1 msk fibersirap gold
1 dl lingon, frysta
Värm ugnen till 175 C grader. Smörj en ugnsfast form med kokosolja. I en skål blanda havregryn, chia, linfrö & havtorn, lingonpulver, pepparkakskrydda, bakpulver och salt. Tillsätt mjölk, sirap och lingon. Häll blandningen i formen och grädda i 30 minuter eller tills gyllenbrun.
Baked Oatmeal with Gingerbread and Lingonberry

2.5 dl old-fashioned oats
1 tbsp chia seeds
0.5 tbsp Love Arctic milled flaxseed & buckthorn
1 tsp Love Arctic lingonberry powder
1 tsp gingerbread spice
0.5 tsp baking powder
pinch of salt
2,5 dl almond milk
1 tbsp fiber syrup gold, Sukrin
1 dl lingonberries, frozen
Preheat the oven to 175 C degrees. Grease an ovenproof dish with coconut oil. In a bowl, mix oatmeal, chia, flaxseed & sea buckthorn, lingonberry powder, gingerbread spice, baking powder and salt. Add milk, syrup and lingonberries. Pour the mixture into the ovenproof dish and bake for 30 minutes or until golden brown.

Ja det gäller att frossa i de goda smakerna av julen! Och lingon passar ju så bra till pepparkakskryddor.
